Currently have XB6 with non-fiber, coming into the house with a 500mbps ignite plan. Wondering if the XB8 is compatible, even though I DON'T have that secondary box converting the fiber line coming into my house to a coaxial cable that plugs into the modem.
Anyone know if I the XB8 would still function?

The XB8 is a cable modem, so it can be used with a DOCSIS/cable Internet service. HOWEVER, if you have Ignite 500 Mbps Internet, your service does not qualify for the XB8; Rogers will only upgrade you to the XB7
The XB8 gateways are also currently in VERY short supply -- I just heard from a Rogers tech that the only ones who are able to get one at the moment are those with a (XGS-PON) fibre Internet service, and most of those are still currently only able to get an XB7. If you have a 1.5 Gigabit cable Internet service, it is next-to-impossible to get an XB8... and if you have an XB8 but need a replacement, it will be replaced with an XB7.
