Although it sounds like a handy option, I don't believe that would be possible since each app functions independently and may work differently when it comes to logging out.

Thanks - at another property I used to rent out, we had a Smart TV with Roku - and there was an option on there to log out of all apps ("Auto Sign Out mode" - https://www.theverge.com/2019/1/15/18184131/roku-auto-sign-out-mode-airbnb-hosts). So just wasn't sure if there was some way to make the Rogers Ignite box do the same - looks like not, at least for now 🙂

I think you should be able to do this by going to "Settings / Privacy / Locally Stored Data" and then selecting "OK" to clear local storage. It may not technically sign the set-top box out of all apps but it will clear any stored login credentials and other related data, which should prevent anyone using the STB from accessing any services that had been signed into previously. For good measure, you can also fully reset Netflix by going to Help (press the "A" button), scroll right and select "Reset Netflix".
