With a /64 you have a single subnet. With a /56, you can create 256 /64 subnets. So, if you're looking to create specific subnets for specific purposes, the /56 allows you to do that. How you do that within a router is beyond me as I'm not an IPv6...

With cable service, you should be able to request a /56. That won't work with the fibre system at the moment. Apparently Rogers is working on that.
