Leon,  the same thing happened to me when I first updated it, but now if you update it on LG's site with their updater thing it actually does bring it to 1.6.

OS 1.6 has arrived on the LG EVE / GW620R!!!!!

 

I'm seeing the following 

Firmware 1.6,

Kernel version 2.6.29, LGE@new1 #2

Software version GW620RAT-01-V10q-+302-72-NOV-01-2010

 

Head over to LG's Canadian website, look up the USB drivers for the GW620 and instal the apps to your computer and run the update software for your phone. REMEMBER TO BACK UP YOUR DATA!!!
